Winemaker's Notes:
Ruby-red coloring with herb-laced aromas of cherry and
blackcurrant. Tangy
cherry and berry skin flavors show good
palate-coating intensity and spicy back-end
lift A bit tart on the finish with a cherry
finish. Supple tannins add
nice weight and structure.
The fruit for this Cabernet Sauvignon came from premium Eden Valley vineyards. This
wine was made using a philosophy of minimal
handling to preserve the wine's primary fruit
character.
The wine underwent primary fermentation in
stainless steel and then spent six months on oak, where it underwent malolactic
fermentation. This Cabernet Sauvignon
embodies the characters of cooler climate
wines: more savory fruit, more intense
aromatics, & spice.
