The Domaine Pierre Amiot has been producing wine in the village of Morey St. Denis for five generations. The current winemaker, Jean-Louis Amiot, works closely with Patrick Lesec and uses the non-interventionist philosophy of winemaking to produce lovely red Burgundies in the distinctly elegant style. His wines are wonderfully fragrant with lush, pure fruit, fine textures and long, complex finishes.
In the vineyards, Jean-Louis follows the principles of lutte raisonnee, which means that he is committed to minimizing or eliminating, when possible, the use of synthetic fertilizers and pesticides. He keeps his yields down to 25-35 hectoliters per hectare, and his vineyards range in age from 18-75 years.
Jean-Louis fully de-stems his fruit, and maceration lasts for 20 days. All his wines are aged in new barrels and the wine is kept on its lees until the one racking just before bottling. The oak components are seamlessly integrated into the wine without protruding. The wines are not fined or filtered and the racking and bottling are done by hand. The impact of the intense care and gentle handling of the wine is evident in their supple fruit and silky textures.
